With worldwide demand for gluten-free and allergen-free organic ingredients growing, Hudson, Wisconsin, U.S. supplier of organic ingredients Ciranda, Inc. has recently introduced a certified organic, pre-gelatinized tapioca starch for use in gluten-free food manufacturing. The new product responds to increased demand from Ciranda’s customers for additional gluten-free ingredients. The company also offers its customers allergen-free and Kosher Pareve organic chocolates made in an allergen-free facility.
According to Ciranda the new product’s neutral flavor as well as its ability to stabilize and thicken formulations without cooking ─ known as cold-water swelling ─ offers gluten-free food manufacturers a healthful and reliable means to achieve proper rise, elasticity and texture in baked goods and desserts. “As a result, the product delivers superior texture and taste to gluten-free breads, mixes, cookies, instant sauces, puddings and frozen desserts, both dairy and non-dairy. In addition, the tapioca pre-gel starch also maintains excellent freeze/thaw characteristics and has a low level of syneresis.”
